  2. 2. Cut the leek into strips about 6 centimeters long.
  3. 3. Place the pine nuts in a dry pan without oil.
  4. 4. Toast the pine nuts in the pan until they are golden brown.
  5. 5. Peel the garlic and chop it very finely.
  6. 6. Grate the skin of the lemon to get the zest.
  7. 7. Finely chop the parsley.
  8. 8. Crumble the goat cheese with your fingers.
  9. 9. Mix the toasted pine nuts, garlic, lemon zest, parsley, and goat cheese in a bowl.
  10. 10. Heat butter in a large pan.
  11. 11. Add the leek strips to the hot butter and sauté them briefly.
  12. 12. Deglaze the leek with a small amount of water.
  13. 13. Season the vegetables with salt and pepper.
  14. 14. Cover the pan and simmer the leek for about 4 minutes.
  15. 15. Remove the lid and let the remaining liquid evaporate.
  16. 16. Place the leek in a pre-warmed bowl.
