🍽️ Leek Strips with Toasted Pine Nuts and Goat Cheese

Ingredients
- 2 stalks leek
- 4 tbsp pine nuts
- 3 cloves garlic
- 1 tsp lemon zest
- 0.5 bunch fresh chopped parsley
- 80 g goat cheese
- 3 tbsp butter
- salt
- pepper (from the mill)
Instructions
- 1. Wash the leek thoroughly and remove the tough ends.
- 2. Cut the leek into strips about 6 centimeters long.
- 3. Place the pine nuts in a dry pan without oil.
- 4. Toast the pine nuts in the pan until they are golden brown.
- 5. Peel the garlic and chop it very finely.
- 6. Grate the skin of the lemon to get the zest.
- 7. Finely chop the parsley.
- 8. Crumble the goat cheese with your fingers.
- 9. Mix the toasted pine nuts, garlic, lemon zest, parsley, and goat cheese in a bowl.
- 10. Heat butter in a large pan.
- 11. Add the leek strips to the hot butter and sauté them briefly.
- 12. Deglaze the leek with a small amount of water.
- 13. Season the vegetables with salt and pepper.
- 14. Cover the pan and simmer the leek for about 4 minutes.
- 15. Remove the lid and let the remaining liquid evaporate.
- 16. Place the leek in a pre-warmed bowl.
- 17. Sprinkle the cheese and pine nut mixture over the leek.
- 18. Serve the dish immediately.
