  1. 1. Peel the carrots and wash the zucchini thoroughly.
  2. 2. Grate the carrots and the zucchini using the coarse side of the vegetable grater.
  3. 3. Wash the leek and cut it into rings.
  4. 4. Finely chop the leek rings.
  5. 5. Peel the garlic and press it directly onto the grated vegetables.
  6. 6. Crumble the feta cheese into small, fine pieces.
  7. 7. Add the herbs, the crumbled sheep's cheese, the flour, and the eggs to the vegetable mixture.
  8. 8. Season the mixture with salt and pepper.
  9. 9. Stir all ingredients well until a homogeneous mixture forms.
  10. 10. Heat some olive oil in a frying pan.
  11. 11. Take a tablespoon of the vegetable mixture and place it in the hot oil.
  12. 12. Press the portion slightly flat with the back of the spoon to form a patty.
  13. 13. Fry the patties on each side for about 4 minutes until they are crispy and brown.
  14. 14. Keep the finished patties warm in the preheated oven.
  15. 15. Serve the patties with tzatziki and flatbread.
