🍽️ Crispy Vegetable and Herb Patties

Ingredients
- 250 g Carrots
- 250 g Leek (only the white part)
- 250 g Zucchini
- Salt
- 2 Garlic cloves
- Parsley (1 tbsp chopped each)
- Dill (1 tbsp chopped each)
- 100 g Feta cheese
- 2 tbsp Flour
- 2 Eggs
- Pepper (from the mill)
- 4 tbsp Olive oil
Instructions
- 1. Peel the carrots and wash the zucchini thoroughly.
- 2. Grate the carrots and the zucchini using the coarse side of the vegetable grater.
- 3. Wash the leek and cut it into rings.
- 4. Finely chop the leek rings.
- 5. Peel the garlic and press it directly onto the grated vegetables.
- 6. Crumble the feta cheese into small, fine pieces.
- 7. Add the herbs, the crumbled sheep's cheese, the flour, and the eggs to the vegetable mixture.
- 8. Season the mixture with salt and pepper.
- 9. Stir all ingredients well until a homogeneous mixture forms.
- 10. Heat some olive oil in a frying pan.
- 11. Take a tablespoon of the vegetable mixture and place it in the hot oil.
- 12. Press the portion slightly flat with the back of the spoon to form a patty.
- 13. Fry the patties on each side for about 4 minutes until they are crispy and brown.
- 14. Keep the finished patties warm in the preheated oven.
- 15. Serve the patties with tzatziki and flatbread.
