🍽️ Grilled Skewers with Halloumi and Couscous

Ingredients
- 1 large red onion
- 1 yellow bell pepper
- 1 red bell pepper
- 200 g Halloumi
- 2 garlic cloves
- 0.5 bunch curly parsley
- 1 tbsp drained capers
- 4 tbsp olive oil
- 1 tsp dark mustard seeds
- salt
- pepper (from the mill)
- 300 g couscous (instant)
- 600 ml vegetable broth
- 20 g butter
Instructions
- 1. Wash the vegetables thoroughly under running water.
- 2. Halve the bell peppers and remove the seeds and core.
- 3. Cut the peppers into small, bite-sized cubes.
- 4. Peel the onions and cut them into wedges.
- 5. Cut the halloumi cheese into small cubes of about one centimeter.
- 6. Peel the garlic clove and chop it finely.
- 7. Wash the parsley and shake it dry.
- 8. Pluck the parsley leaves from the stems.
- 9. Finely chop the parsley leaves together with the capers.
- 10. Mix the oil with the chopped garlic.
- 11. Add the capers and mustard seeds to the oil mixture.
- 12. Stir the chopped parsley into the marinade.
- 13. Season the marinade with salt and pepper to taste.
- 14. Thread the vegetables and cheese alternately onto the wooden skewers.
- 15. Brush the skewers generously with the marinade.
- 16. Let the skewers absorb the flavors for a short time.
- 17. Place the couscous into a bowl.
- 18. Pour hot vegetable broth over the couscous.
- 19. Let the couscous swell for ten minutes.
- 20. Place the vegetable skewers on a hot grill.
- 21. Grill the skewers for five to eight minutes.
- 22. Turn the skewers regularly while grilling.
- 23. Fluff the cooked couscous with a fork.
- 24. Stir the butter into the couscous.
- 25. Serve the couscous together with the grilled skewers on plates.
