🍽️ Vegetable Minced Meat Gratin

Ingredients
- 400 g cooked potatoes
- 1 onion
- 1 red bell pepper
- 2 tbsp oil
- 500 g mixed minced meat (or soy minced meat substitute/health food store)
- 2 tsp paprika powder
- 2 tbsp tomato paste
- 1 tbsp chopped parsley
- 1 zucchini
- 2 tbsp clarified butter
- 300 g green beans
- salt
- pepper from the mill
- 200 g grated Gruyère cheese
Instructions
- 1. Cut the potatoes, the bell pepper, and the zucchini into small, bite-sized cubes.
- 2. Peel the onion and dice it finely.
- 3. Heat some oil in a pan and fry the onion cubes in it.
- 4. Add the soy minced meat to the pan and fry it until crumbly.
- 5. Stir the tomato paste into the minced meat.
- 6. Season the mixture with salt, pepper, and paprika powder.
- 7. Add the chopped parsley and mix everything well.
- 8. Remove the minced meat mixture from the pan and set it aside.
- 9. Fry the potato cubes in the remaining oil in the pan.
- 10. Heat ghee (clarified butter) in a separate pan.
- 11. Stew the bell pepper and zucchini cubes in the ghee for about 5 minutes.
- 12. Wash the green beans and trim the ends.
- 13. Boil the beans in boiling salted water for about 10 minutes.
- 14. Drain the beans, shock them with cold water, and let them drain.
- 15. Grease a baking dish with some fat.
- 16. Layer the prepared vegetables and the minced meat into the baking dish.
- 17. Sprinkle the gratin with the cheese.
- 18. Preheat the oven to 220 degrees Celsius.
- 19. Bake the gratin in the preheated oven for about 20 to 30 minutes.
