🍽️ Vegetable Pan with Fried Eggs

Ingredients
- 3 onions
- 2 zucchinis
- 4 tbsp chive rings
- 2 plum tomatoes
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 6 eggs
Instructions
- 1. Peel the onion and cut it into small cubes. Clean the zucchini and slice it into thin rounds or grate it finely. Wash the tomatoes, remove the stem end, and cut them into narrow wedges. Heat the oil in a non-stick pan.
- 2. Fry the onions and zucchini slices in it over medium heat for 4 to 5 minutes, stirring occasionally. Season everything with salt and pepper.
- 3. Crack the eggs directly over the vegetables, season with salt, and fry on low heat for about 8 to 10 minutes until the whites are set. Plate the eggs with the tomato wedges and serve with fresh chives.
