🍽️ Juicy Beef Balls with Spicy Vegetable Couscous

Ingredients
- 1 onion
- 250 g ground beef
- 1 egg
- 20 g rolled oats (2 tbsp)
- salt
- pepper
- 0.5 tsp ground cumin
- 0.25 tsp paprika powder
- 2 tsp olive oil
- 1 zucchini
- 2 carrots
- 125 g tomatoes
- 100 g couscous (or bulgur)
- 300 ml vegetable broth
- 1 pinch chili flakes
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Take half of the onion cubes and add them to a bowl with the minced meat and the egg and the oats.
- 3. Season the meat mixture with salt, pepper, cumin and paprika powder.
- 4. Knead everything well and form four equal-sized meatballs from it.
- 5. Heat one teaspoon of oil in a frying pan.
- 6. Fry the meatballs at medium heat for seven minutes on each side until golden brown.
- 7. Wash the zucchini, the carrots and the tomatoes and cut them into small cubes.
- 8. Heat the remaining oil in a pot.
- 9. Add the remaining onion, the zucchini, the carrots and the tomatoes to the pot.
- 10. Stew the vegetables at medium heat for five minutes until soft.
- 11. Pour the couscous with hot broth.
- 12. Let the couscous swell for five minutes covered.
- 13. Fluff the couscous with a fork.
- 14. Mix the couscous with the stewed vegetables.
- 15. Season the couscous vegetable mixture with chili, salt and pepper.
- 16. Serve the meatballs together with the vegetable couscous.
