🍽️ Crispy Vegetable Patties

Ingredients
- 125 g millet
- 300 ml vegetable broth
- 1 red bell pepper
- 1 carrot
- 2 spring onions
- 100 g peas (fresh or frozen)
- 3 eggs
- 3 tbsp breadcrumbs
- 2 tbsp freshly chopped parsley
- 1 tbsp medium-hot mustard
- salt
- pepper (from the mill)
- 4 tbsp rapeseed oil
Instructions
- 1. Rinse the millet under cold water.
- 2. Stir the millet into the boiling vegetable broth.
- 3. Let the millet simmer for about 5 minutes.
- 4. Reduce the heat and let the millet swell for another 10 minutes.
- 5. Wash the pepper.
- 6. Peel the carrot.
- 7. Clean the spring onions.
- 8. Dice everything finely.
- 9. Add the vegetables along with the peas to the millet during the last 10 minutes.
- 10. Remove the pan from the heat.
- 11. Let the mixture cool down.
- 12. Stir in the eggs.
- 13. Add the breadcrumbs.
- 14. Add the parsley.
- 15. Add the mustard.
- 16. Season with salt and pepper.
- 17. If necessary, mix in more breadcrumbs until the mixture is easy to shape.
- 18. Form small patties with slightly damp hands.
- 19. Fry the patties in the pan.
