🥗 Fresh Salmon Salad with Orange Dressing

Ingredients
- 250 g mixed leaf salad (e.g. corn salad, arugula, radicchio, oak leaf)
- 1 Orange
- 1 tsp medium-hot mustard
- Salt
- Pepper
- 4 tbsp olive oil
- 8 slices smoked salmon
Instructions
- 1. Wash the leaf salad thoroughly.
- 2. Spin the salad dry.
- 3. Tear the salad into bite-sized pieces.
- 4. Rinse the orange under hot water.
- 5. Dry the orange.
- 6. Slice half of the orange into rounds.
- 7. Squeeze the other half of the orange.
- 8. Whisk the orange juice with mustard, salt, and pepper.
- 9. Add the oil gradually.
- 10. Whisk the mixture into a vinaigrette (an emulsified sauce made of oil and acid).
- 11. Arrange the salad with the orange slices.
- 12. Place a slice of salmon on top.
- 13. Drizzle the salad with the vinaigrette.
