🥤 Mixed Salad with Turkey, Egg and Homemade Cocktail Mayo

Ingredients
- 4 hard-boiled eggs
- 1 turkey cutlet (approx. 250 g)
- 2 tbsp oil
- salt
- pepper (from the mill)
- paprika powder (sweet)
- 250 g sausages (meat sausage, cooked ham... all to your liking)
- 150 g block cheese (butter cheese, Gouda... )
- 4 small tomatoes
- 1 iceberg lettuce
- 0.5 radicchio
- 2 egg yolks
- 1 tsp mustard
- 2 tbsp herb vinegar
- 250 ml olive oil
- 2 tbsp ketchup
- 3 tbsp whipping cream
- 1 tbsp cognac
- salt
- pepper (from the mill)
- 1 pinch cayenne pepper
Instructions
- 1. Cut the turkey meat into thin strips.
- 2. Heat oil in a pan and fry the turkey strips on all sides over high heat.
- 3. Season the meat with salt, pepper and paprika powder.
- 4. Remove the pan from the heat and set the meat aside.
- 5. Boil the eggs until hard and then peel them.
- 6. Cut each egg into eight equal pieces.
- 7. Cut the sausage into thin strips.
- 8. Cut the cheese into thin strips as well.
- 9. Wash the tomatoes thoroughly under running water.
- 10. Remove the stem ends of the tomatoes and cut them into eight wedges.
- 11. Remove wilted leaves from the salad and wash the leaves.
- 12. Dry the salad thoroughly, for example in a salad spinner.
- 13. Cut the iceberg lettuce into coarse strips.
- 14. Roughly tear the leaves of the radicchio with your hands.
- 15. Put the egg yolk, mustard and vinegar in a bowl.
- 16. Whisk these ingredients together with a whisk or hand mixer.
- 17. Add the oil slowly and drop by drop while stirring constantly.
- 18. Continue stirring until the mayonnaise becomes thick and creamy.
- 19. Fold in the ketchup, cream and cognac into the mayonnaise.
- 20. Season the sauce to taste with salt, pepper and cayenne pepper.
- 21. Put all the leaf salads in a large salad bowl.
- 22. Decoratively arrange the turkey strips, sausage, cheese, tomatoes and eggs on the salad.
- 23. Add the cocktail mayonnaise as a topping.
