🍽️ Mixed Bean Stew with Turkey Breast

Ingredients
- 400 g green beans
- 1 stalk leek
- 1 red bell pepper
- 1 onion
- 1 tbsp olive oil
- 1 l poultry broth
- 1 bay leaf
- 400 g white beans (can)
- 1 handful basil
- 350 g smoked turkey breast fillet
- salt
- pepper (from the mill)
- 1 pinch ground cumin
- nutmeg (freshly grated)
- 4 tbsp chive rings
Instructions
- 1. Wash the green beans and remove the tough ends.
- 2. Cut the green beans into small pieces.
- 3. Wash the leek and remove the outer layers.
- 4. Slice the leek into thin rings.
- 5. Wash the bell pepper and remove the inside.
- 6. Cut the bell pepper into thin strips.
- 7. Peel the onion and dice it finely.
- 8. Heat the oil in a large pot.
- 9. Sauté the onions in the hot oil until they are translucent.
- 10. Deglaze the onions with the broth.
- 11. Add the green beans, leek, and bell pepper to the pot.
- 12. Let the stew simmer on low heat for about 10 minutes.
- 13. Rinse the white beans under cold water in a sieve.
- 14. Add the white beans to the stew.
- 15. Wash the basil and pluck the leaves off the stems.
- 16. Stir the basil into the stew.
- 17. Cut the turkey breast into bite-sized cubes.
- 18. Let the turkey cook in the stew for about 5 minutes.
- 19. Season the stew with salt, pepper, cumin, and nutmeg.
- 20. Sprinkle the finished dish with chives.
- 21. Serve the stew hot.
