🍽️ Mixed leaf salad with plums and goat cheese

Ingredients
- 1 Lollo Rosso
- 100 g mixed leaf salad (e.g. head lettuce, corn salad, lettuce heart, sorrel)
- 1 large, red onion
- 8 red plums
- 200 g goat fresh cheese (in a block)
- 150 g walnuts
- 2 tbsp lemon juice
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- 0.5 tsp liquid honey
- parsley (for garnish)
Instructions
- 1. Wash the salad leaves thoroughly.
- 2. Remove any damaged or wilted leaves.
- 3. Spin the leaves dry.
- 4. Tear the leaves into bite-sized pieces.
- 5. Peel the onion.
- 6. Halve the onion.
- 7. Cut the onion halves into thin strips.
- 8. Wash the plums.
- 9. Halve the plums.
- 10. Remove the pits from the plum halves.
- 11. Cut the plums into wedges.
- 12. Cut the goat cheese into small cubes.
- 13. Heat a pan without fat.
- 14. Roast the nuts in the hot pan.
- 15. Remove the nuts as soon as they are fragrant.
- 16. Let the nuts cool down.
- 17. Whisk the lemon juice with the oil.
- 18. Season the mixture with salt.
- 19. Season the mixture with pepper.
- 20. Add honey and adjust to taste.
- 21. Divide the salad among small bowls.
- 22. Sprinkle the onion strips over the top.
- 23. Distribute the plum wedges on top.
- 24. Add the cooled nuts.
- 25. Distribute the cheese cubes on top.
- 26. Drizzle the salad with the vinaigrette.
- 27. Garnish the salad with parsley leaves.
- 28. Serve the salad immediately.
