🍽️ Fruity Quince Jelly

Ingredients
- 500 g Quince (yields approx. 250 ml juice)
- 1 tbsp Lemon juice
- 250 g Jam sugar (1:1)
Instructions
- 1. Rinse the quinces under running water.
- 2. Remove the stem end and the blossom end from the fruits.
- 3. Cut the quinces into small cubes. Keep the skin and the core intact.
- 4. Place the quince cubes into a large pot.
- 5. Cover the fruits with 1.5 liters of water.
- 6. Add the juice of one lemon to the pot.
- 7. Bring the mixture to a boil on the stove.
- 8. Let the quinces simmer on low heat for about 45 minutes until soft.
- 9. Place a fine jelly bag (a cloth for filtering) into a large sieve.
- 10. Place the sieve with the cloth over a clean, large pot.
- 11. Pour the cooked quinces and the liquid carefully into the cloth.
- 12. Let the juice drip through the cloth slowly without pressure.
- 13. Gently squeeze the cloth at the very end to extract the last drops of juice.
- 14. Let the extracted quince juice cool down completely.
- 15. Measure the amount of the cooled juice.
- 16. Add exactly the same amount of sugar as you have juice (equal quantity).
- 17. Bring the mixture of juice and sugar back to a boil.
- 18. Let the jelly reduce while stirring constantly until it reaches the setting point.
- 19. Remove the pot with the hot jelly from the heat.
- 20. Fill the hot jelly immediately into prepared, clean jars.
- 21. Fill the jars to the very brim.
- 22. Seal the jars immediately with lids and rings.
- 23. Place the sealed jars upside down for 10 minutes.
- 24. Turn the jars right side up afterwards.
- 25. Let the jars cool down completely at room temperature.
- 26. Slice bread or rolls for serving.
- 27. Spread butter on the bread slices.
- 28. Add quince jelly on top according to your taste.
