🍽️ Homemade Vegetable Broth Powder

Ingredients
- 2 stalks leek
- 2 onions
- 5 fresh garlic cloves
- 4 carrots
- 250 g celeriac
- 200 g mushrooms
- 1 handful parsley
- 3 sprigs lovage
- 75 g sea salt
Instructions
- 1. Preheat the oven to 80 degrees Celsius with fan setting.
- 2. Wash the leeks thoroughly and remove the dark ends. Slice them into thin rings.
- 3. Peel the onions, garlic, carrots, and celery.
- 4. Finely dice the onions and garlic.
- 5. Coarsely grate the carrots and celery.
- 6. Clean the mushrooms and cut them into small pieces.
- 7. Rinse the herbs briefly and shake them dry.
- 8. Roughly chop the herbs including the stems.
- 9. Mix all prepared ingredients thoroughly in a large bowl.
- 10. Line a baking tray with baking paper.
- 11. Spread the vegetable mixture evenly over the tray.
- 12. Place the tray in the preheated oven.
- 13. Dry the vegetables for 6 to 8 hours.
- 14. Turn the mixture regularly in between to ensure even drying.
- 15. Remove the tray from the oven and let the vegetables cool down completely.
- 16. Mix the cooled vegetables with the salt.
- 17. Grind the mixture in portions in a blender until very fine powder.
- 18. Fill the finished broth powder into clean jars.
- 19. Store the jars in a cool, dry, and dark place.
- 20. The powder keeps for at least 6 months.
