  1. 1. Preheat the oven to 80 degrees Celsius with fan setting.
  2. 2. Wash the leeks thoroughly and remove the dark ends. Slice them into thin rings.
  3. 3. Peel the onions, garlic, carrots, and celery.
  4. 4. Finely dice the onions and garlic.
  5. 5. Coarsely grate the carrots and celery.
  6. 6. Clean the mushrooms and cut them into small pieces.
  7. 7. Rinse the herbs briefly and shake them dry.
  8. 8. Roughly chop the herbs including the stems.
  9. 9. Mix all prepared ingredients thoroughly in a large bowl.
  10. 10. Line a baking tray with baking paper.
  11. 11. Spread the vegetable mixture evenly over the tray.
  12. 12. Place the tray in the preheated oven.
  13. 13. Dry the vegetables for 6 to 8 hours.
  14. 14. Turn the mixture regularly in between to ensure even drying.
  15. 15. Remove the tray from the oven and let the vegetables cool down completely.
  16. 16. Mix the cooled vegetables with the salt.
  17. 17. Grind the mixture in portions in a blender until very fine powder.
  18. 18. Fill the finished broth powder into clean jars.
  19. 19. Store the jars in a cool, dry, and dark place.
  20. 20. The powder keeps for at least 6 months.
