Ingredients
- 1 kg kitchen-ready cod (whole or cut)
- Lemon juice (from 1 lemon)
- 2 l water
- 75 g mirepoix (frozen)
- 1 bay leaf
- 10 peppercorns
- 3 cloves
- 5 allspice berries
- 1 medium, peeled onion
- 2 tbsp salt
- 6 tbsp vinegar
Instructions
- 1. Rinse the cod under cold, running water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Drizzle the cod with the juice of one lemon.
- 4. Let the fish sit aside for about 30 minutes.
- 5. Bring 2 liters of water together with the remaining ingredients to a boil in a pot.
- 6. Add the fish to the broth after 5 minutes of boiling time.
- 7. Bring the broth back to a boil.
- 8. Let the fish cook through for 25 to 30 minutes.
- 9. Remove the cooked fish from the broth.
- 10. Arrange the cod on a pre-warmed plate.
