🍽️ Boiled Lobster in Herb Broth

Ingredients
- 4 Lobster (approx. 500 g each)
- 2 Bay leaves
- 1 tsp Peppercorns
- 100 g Leek
- 100 g Celery
- 100 g Carrots
- 750 ml White wine
- 1 Lemon (juiced)
- 1 tsp Salt
- 300 g Butter
- 2 Lemons (organic)
Instructions
- 1. Fill a large pot with 1.5 liters of water.
- 2. Lightly salt the water.
- 3. Add bay leaves and peppercorns to the water.
- 4. Bring the liquid to a boil.
- 5. Wash the vegetables thoroughly.
- 6. Remove any inedible parts from the vegetables.
- 7. Cut the vegetables into small cubes.
- 8. Add the vegetable cubes to the boiling broth.
- 9. Pour the white wine into the pot.
- 10. Add the lemon juice.
- 11. Let the mixture boil vigorously for 5 minutes.
- 12. Take the lobster and place it head-first into the boiling water.
- 13. Remove the pot from the heat immediately.
- 14. Let the lobster steep in the hot water for another 10 to 15 minutes.
- 15. Meanwhile, melt the butter in a small saucepan.
- 16. Skim the foam rising from the melted butter.
- 17. Pour the clarified butter into small bowls.
- 18. Cut the lemon into wedges.
- 19. Remove the cooked lobster from the water.
- 20. Serve the lobster with the clarified butter and lemon wedges.
- 21. Enjoy your boiled lobster.
- 22. Use the remaining broth for other dishes.
