  1. 1. Boil the eggs until hard. Immediately shock them in cold water. Pat them dry. Carefully cut off the top tips of the egg halves.
  2. 2. Scoop out only the yolks from two eggs using a teaspoon. Mix the yolks with two teaspoons of mustard until smooth. Season the mixture with salt and pepper. Add a few drops of balsamic vinegar into the empty egg halves. Fill the mustard mixture back into the eggs. Sprinkle with paprika powder and fresh cress.
  3. 3. Carefully remove the yolks and whites from two eggs and chop them finely. Mix the pieces with two teaspoons of mayonnaise, some cress, plenty of paprika powder, salt, and pepper. Fill the mixture back into the empty eggshells. Place the eggs in egg cups. Decorate them as you like with shrimp.
  4. 4. Carefully remove the yolks and whites from two eggs and chop them finely. Finely chop half a slice of smoked salmon. Mix the egg, salmon, two teaspoons of mayonnaise, and two teaspoons of lemon juice. Season with salt and pepper. Refill the eggshells. Place the eggs in egg cups. Garnish with salmon pieces and cress.
  5. 5. Carefully remove the yolks and whites from two eggs and chop them finely. Season the pieces with salt and pepper. Stir in one teaspoon of mayonnaise and one teaspoon of salmon caviar into the egg mixture. Fill the mass into the eggshells. Top with a little more salmon caviar. Garnish with cress.
