  1. 1. Carefully cut off the top third of the hard-boiled eggs.
  2. 2. Remove the egg yolks and place them in a bowl.
  3. 3. Remove small shell fragments from the empty egg halves.
  4. 4. Rinse the empty egg halves briefly.
  5. 5. Grate the horseradish finely.
  6. 6. Mix the grated horseradish with the egg yolks.
  7. 7. Season the mixture with salt and pepper.
  8. 8. Melt the butter in a pan.
  9. 9. Add the egg mixture to the hot pan.
  10. 10. Stir the mixture until it thickens.
  11. 11. Remove the mixture from the pan.
  12. 12. Let the mixture cool and stir it occasionally.
  13. 13. Set aside a few rings of chives for decoration.
  14. 14. Mix the cooled egg mixture with two tablespoons of sour cream.
  15. 15. Fold the remaining chives into the mixture.
  16. 16. Fill the mixture into the prepared eggshells.
  17. 17. Spread the remaining sour cream on half of the stuffed eggs.
  18. 18. Place caviar and the saved chive rings on this half.
  19. 19. Place chopped salmon on the other half of the eggs.
  20. 20. Garnish the salmon eggs with lemon zest.
  21. 21. Serve the eggs.
