🍽️ Grilled Swordfish Steaks with Anchovy Butter

Ingredients
- 4 swordfish steaks (à 200 g)
- lemons
- 2 tbsp fennel seeds
- 0.5 tsp salt
- 2 garlic cloves (finely chopped)
- 150 g butter
- 4 anchovy fillets (soaked, drained and finely chopped)
- cayenne pepper
- 2 tbsp dill
- 1 tbsp lemon zest
- pink peppercorns
- lemon wedges
- dill tips
Instructions
- 1. Pour the lemon juice into a small bowl.
- 2. Add the fennel seeds, salt, and garlic.
- 3. Stir the marinade well.
- 4. Place the fish steaks into the marinade.
- 5. Let the fish marinate for about 30 minutes.
- 6. Remove the steaks from the marinade.
- 7. Pat the steaks dry with a kitchen towel.
- 8. Take the butter and the anchovy fillets.
- 9. Add a pinch of cayenne pepper.
- 10. Mix everything into a smooth paste.
- 11. Brush the fish steaks with some of the anchovy butter.
- 12. Shape the remaining butter into small rolls.
- 13. Chill the butter rolls.
- 14. Heat a grill pan over high heat.
- 15. Place the steaks in the hot pan.
- 16. Grill the steaks for 3 minutes on the first side.
- 17. Turn the steaks over.
- 18. Grill the steaks for another 3 minutes on the second side.
- 19. Take the chilled butter rolls.
- 20. Roll the butter in dill and lemon zest.
- 21. Slice the butter rolls.
- 22. Serve the butter slices alongside the steaks.
- 23. Sprinkle pink pepper over the dish.
- 24. Garnish with lemon wedges and dill tips.
