🍽️ Grilled Romaine Lettuce with Mint Dressing

Ingredients
- 30 g Pine nuts (2 tbsp)
- 2 sprigs Mint
- 3 tbsp Olive oil
- Salt
- Pepper
- 1 tbsp Lemon juice
- 600 g Romaine lettuce hearts (4 Romaine lettuce hearts)
- 30 g Parmesan (1 piece; 30% fat in dry matter)
- 200 g Spelt whole grain bread
Instructions
- 1. Toast the pine nuts in a hot pan without fat over medium heat.
- 2. Wash the mint and shake it dry.
- 3. Pluck the mint leaves from the stems.
- 4. Puree the mint leaves finely with oil and 2 to 3 tablespoons of water.
- 5. Season the mint dressing with salt, pepper, and lemon juice.
- 6. Wash the lettuce hearts and shake them dry.
- 7. Halve the lettuce hearts lengthwise.
- 8. Brush the lettuce hearts with 1 tablespoon of seasoned oil.
- 9. Grill the lettuce hearts on the preheated grill for 5 minutes, turning occasionally.
- 10. Shave the Parmesan.
- 11. Arrange the grilled lettuce hearts on a platter.
- 12. Drizzle the salad with the remaining seasoned oil.
- 13. Sprinkle the salad with the toasted pine nuts and Parmesan.
- 14. Toast the baguette bread on the grill.
- 15. Serve the bread with the salad.
