  1. 1. Put the Gorgonzola, sour cream, and lemon juice into a tall container.
  2. 2. Blend the ingredients with an immersion blender until smooth.
  3. 3. Season the cream with salt and pepper to taste.
  4. 4. Finely chop the parsley and stir it into the Gorgonzola cream.
  5. 5. Rinse the radicchio under cold running water.
  6. 6. Remove the hard base of the stem.
  7. 7. Pat the radicchio dry with a kitchen towel.
  8. 8. Cut the heads in half lengthwise.
  9. 9. Whisk the oil in a small bowl with salt and pepper.
  10. 10. Brush the radicchio halves on the outside and between the leaves with the seasoned oil mixture.
  11. 11. Preheat the grill and set the heat to medium-high.
  12. 12. Place the radicchio halves cut-side down on the grill grate.
  13. 13. Grill the halves for about 4 minutes on the first side.
  14. 14. Press the halves against the grate occasionally with tongs while grilling.
  15. 15. Turn the radicchio halves and grill for another 4 minutes on the other side.
  16. 16. Remove the grilled radicchio from the grill.
  17. 17. Serve the radicchio warm with the Gorgonzola cream as a dip.
