🍽️ Grilled Radicchio with Gorgonzola Dip

Ingredients
- 300 g Gorgonzola
- 200 g sour cream
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
- 2 tbsp chopped parsley
- 4 large firm heads radicchio
- 12 tbsp olive oil
Instructions
- 1. Put the Gorgonzola, sour cream, and lemon juice into a tall container.
- 2. Blend the ingredients with an immersion blender until smooth.
- 3. Season the cream with salt and pepper to taste.
- 4. Finely chop the parsley and stir it into the Gorgonzola cream.
- 5. Rinse the radicchio under cold running water.
- 6. Remove the hard base of the stem.
- 7. Pat the radicchio dry with a kitchen towel.
- 8. Cut the heads in half lengthwise.
- 9. Whisk the oil in a small bowl with salt and pepper.
- 10. Brush the radicchio halves on the outside and between the leaves with the seasoned oil mixture.
- 11. Preheat the grill and set the heat to medium-high.
- 12. Place the radicchio halves cut-side down on the grill grate.
- 13. Grill the halves for about 4 minutes on the first side.
- 14. Press the halves against the grate occasionally with tongs while grilling.
- 15. Turn the radicchio halves and grill for another 4 minutes on the other side.
- 16. Remove the grilled radicchio from the grill.
- 17. Serve the radicchio warm with the Gorgonzola cream as a dip.
