  1. 1. Rinse the lemon under hot water and pat it dry.
  2. 2. Grate about 2 teaspoons of fine lemon zest.
  3. 3. Cut the lemon in half.
  4. 4. Squeeze the juice from one of the halves.
  5. 5. Slice the other lemon half into thin slices for garnish.
  6. 6. Melt the butter in a small saucepan over medium heat.
  7. 7. Stir the mustard into the melted butter.
  8. 8. Add the lemon juice to the butter mixture.
  9. 9. Fold in the grated lemon zest.
  10. 10. Rinse the salmon cutlets.
  11. 11. Pat the salmon dry with a kitchen towel.
  12. 12. Brush the salmon cutlets on both sides with the lemon butter mixture.
  13. 13. Season the salmon with salt.
  14. 14. Generously sprinkle the salmon with coarsely ground mixed pepper.
  15. 15. Place the salmon on a grill pan.
  16. 16. Grill the salmon for 5 to 7 minutes on the first side.
  17. 17. Turn the salmon and grill for another 5 to 7 minutes on the second side.
  18. 18. Serve the salmon with the lemon slices.
