🍽️ Grilled Halloumi and Zucchini with Berry Salsa

Ingredients
- 250 g blueberries
- 125 g blackberries
- 125 g red currants
- 1 red chili pepper
- 1 spring onion
- 2 sprigs rosemary
- 2 tbsp balsamic vinegar
- 2 tsp honey
- salt
- pepper
- 2 yellow zucchini
- 2 tsp olive oil
- 300 g halloumi
- coarse sea salt
Instructions
- 1. Pick over the berries and wash them thoroughly.
- 2. Halve the berries according to their size.
- 3. Wash the chili pepper.
- 4. Cut the chili pepper in half lengthwise.
- 5. Remove the seeds from the chili pepper.
- 6. Cut the chili pepper into thin strips.
- 7. Clean the spring onions.
- 8. Wash the spring onions.
- 9. Shake the spring onions dry.
- 10. Slice the spring onions into thin rings.
- 11. Wash the rosemary.
- 12. Shake the rosemary dry.
- 13. Pluck the needles off the rosemary.
- 14. Whisk the balsamic vinegar with the honey.
- 15. Add the chili strips to the vinegar-honey mixture.
- 16. Add the rosemary needles to the mixture.
- 17. Season the mixture with a pinch of salt.
- 18. Season the mixture with pepper.
- 19. Fold the berries into the marinade.
- 20. Fold the spring onion rings into the marinade.
- 21. Let the salsa marinate for about 30 minutes.
- 22. Clean the zucchini.
- 23. Wash the zucchini.
- 24. Slice the zucchini diagonally into strips.
- 25. Brush the zucchini strips with some oil.
- 26. Cut the halloumi into strips about 5 millimeters thick.
- 27. Place the zucchini on the hot grill.
- 28. Grill the zucchini for 4 to 5 minutes on one side.
- 29. Turn the zucchini and grill for 4 to 5 minutes on the other side.
- 30. Place the halloumi on the hot grill.
- 31. Grill the halloumi for 4 to 5 minutes on one side.
- 32. Turn the halloumi and grill for 4 to 5 minutes on the other side.
- 33. Rub the grilled zucchini with coarse sea salt.
- 34. Rub the grilled zucchini with pepper.
- 35. Serve the zucchini together with the halloumi.
- 36. Serve the salsa alongside.
