  1. 1. Cut off the woody ends of the green asparagus.
  2. 2. Bring a pot of water to a boil and add a pinch of salt.
  3. 3. Cook the asparagus in the boiling water for about 3 minutes.
  4. 4. Fill a bowl with cold water.
  5. 5. Remove the asparagus from the pot and place it immediately into the cold water to shock it (this stops the cooking process).
  6. 6. Turn on the grill and preheat it.
  7. 7. Take the asparagus out of the cold water and pat it dry with a kitchen towel.
  8. 8. Brush each asparagus spear lightly with olive oil.
  9. 9. Place the asparagus on the hot grill grate.
  10. 10. Grill the asparagus for 3 to 5 minutes.
  11. 11. Turn the asparagus repeatedly while grilling so it cooks evenly.
  12. 12. Put 6 tablespoons of olive oil, balsamic vinegar, salt, and pepper into a small bowl.
  13. 13. Stir the ingredients vigorously until a vinaigrette (an emulsified vinegar-oil mixture) forms.
  14. 14. Place the grilled asparagus on a serving plate.
  15. 15. Drizzle the vinaigrette evenly over the asparagus.
  16. 16. Sprinkle toasted pine nuts over the salad.
  17. 17. Cover the asparagus with many thin shavings of Parmigiano Reggiano cheese.
  18. 18. Serve the salad immediately while warm.
