🥗 Grilled Green Asparagus Salad

Ingredients
- 1000 g green asparagus
- 6 tbsp olive oil (extra virgin)
- 80 g pine nuts (roasted)
- 3 tbsp white balsamic vinegar
- Parmesan
- salt
- pepper (freshly ground)
Instructions
- 1. Cut off the woody ends of the green asparagus.
- 2. Bring a pot of water to a boil and add a pinch of salt.
- 3. Cook the asparagus in the boiling water for about 3 minutes.
- 4. Fill a bowl with cold water.
- 5. Remove the asparagus from the pot and place it immediately into the cold water to shock it (this stops the cooking process).
- 6. Turn on the grill and preheat it.
- 7. Take the asparagus out of the cold water and pat it dry with a kitchen towel.
- 8. Brush each asparagus spear lightly with olive oil.
- 9. Place the asparagus on the hot grill grate.
- 10. Grill the asparagus for 3 to 5 minutes.
- 11. Turn the asparagus repeatedly while grilling so it cooks evenly.
- 12. Put 6 tablespoons of olive oil, balsamic vinegar, salt, and pepper into a small bowl.
- 13. Stir the ingredients vigorously until a vinaigrette (an emulsified vinegar-oil mixture) forms.
- 14. Place the grilled asparagus on a serving plate.
- 15. Drizzle the vinaigrette evenly over the asparagus.
- 16. Sprinkle toasted pine nuts over the salad.
- 17. Cover the asparagus with many thin shavings of Parmigiano Reggiano cheese.
- 18. Serve the salad immediately while warm.
