  1. 1. Rinse the fish inside and out under cold running water. Pat them completely dry with a kitchen towel.
  2. 2. Wash the coriander sprigs and shake off excess water. Pluck the fresh leaves from the stems and place them in a mortar.
  3. 3. Peel the garlic cloves. Cut them in half and add them to the mortar along with the coriander.
  4. 4. Add some lemon juice and the oil. Mash the ingredients into a fine paste using the pestle.
  5. 5. Season the paste with the remaining lemon juice, cumin, cayenne pepper, and salt. Mix in the fennel seeds.
  6. 6. Coat the fish thoroughly on all sides with the spice paste.
  7. 7. Place the fish on a grill grate. Grill them over hot heat for about 6 to 10 minutes on each side.
