🥗 Grilled Squid Rings on Arugula with Spicy Dressing

Ingredients
- 250 g arugula
- 500 g squid ring (ready for kitchen)
- salt
- pepper (from the mill)
- olive oil (for brushing)
- 2 tbsp mayonnaise
- 2 tbsp yogurt
- 3 tbsp ketchup
- 20 ml cognac
- 1 tsp horseradish (jar)
- 1 tbsp freshly chopped basil
- lemon juice
- salt
- cayenne pepper
- lime zest (for garnish)
Instructions
- 1. Wash the arugula thoroughly.
- 2. Shake the arugula dry.
- 3. Wash the squid rings.
- 4. Pat the squid rings dry with a kitchen towel.
- 5. Season the squid rings with salt and pepper.
- 6. Drizzle the squid rings with a little olive oil.
- 7. Preheat the grill.
- 8. Grill the squid rings on the hot grill surface.
- 9. Grill the squid rings for one to two minutes per side.
- 10. Put the mayonnaise in a bowl.
- 11. Add the yogurt to the mayonnaise.
- 12. Add the ketchup to the mixture.
- 13. Add the cognac to the mixture.
- 14. Add the horseradish to the mixture.
- 15. Add the basil to the mixture.
- 16. Add two to three tablespoons of water to the mixture.
- 17. Stir the dressing ingredients until smooth.
- 18. Add lemon juice to the dressing.
- 19. Season the dressing with salt.
- 20. Season the dressing with cayenne pepper.
- 21. Taste the dressing.
- 22. Distribute the arugula onto plates.
- 23. Place the grilled squid rings on the arugula.
- 24. Drizzle the dish with the dressing.
- 25. Garnish the dish with lime wedges.
- 26. Serve the dish.
