  1. 1. Wash the zucchini thoroughly under running water.
  2. 2. Remove the hard ends at the tips of the zucchini.
  3. 3. Cut each zucchini lengthwise into two equal halves.
  4. 4. Heat a non-stick grill pan on the stovetop.
  5. 5. Place the zucchini halves in the hot pan with the cut side facing down.
  6. 6. Grill the zucchini over low heat for 10 to 12 minutes.
  7. 7. Season the grilled zucchini with salt and pepper to taste.
  8. 8. Remove the zucchini from the pan and let it cool for about 10 to 12 minutes.
  9. 9. Wash the tomatoes thoroughly under running water.
  10. 10. Cut out the hard stem attachments from the tomatoes.
  11. 11. Slice the tomatoes into even slices.
  12. 12. Wash the arugula thoroughly under running water.
  13. 13. Pick off coarse stems and tough leaves from the arugula.
  14. 14. Dry the arugula in a salad spinner or with a kitchen towel.
  15. 15. Spread a thin layer of tahini paste over the cooled zucchini halves.
  16. 16. Top the zucchini with the dry arugula.
  17. 17. Distribute the tomato slices evenly over the arugula.
  18. 18. Sprinkle a little sea salt over the finished dish.
  19. 19. Serve the grilled zucchini immediately while warm.
