  1. 1. Cut the watermelon into eight thick slices using a large knife.
  2. 2. Remove the large seeds from the slices.
  3. 3. Carefully cut the flesh away from the rind using a small knife.
  4. 4. Roughly chop the macadamia nuts.
  5. 5. Place the chopped nuts and sliced almonds into a non-stick pan.
  6. 6. Toast the nuts without fat over medium heat.
  7. 7. Allow the toasted nuts to cool completely.
  8. 8. Wash the lemon balm and shake it dry.
  9. 9. Pluck the leaves from the stems.
  10. 10. Roughly chop the leaves.
  11. 11. Puree the cooled nuts and chopped lemon balm very finely using a hand blender.
  12. 12. Squeeze the half lime.
  13. 13. Measure out two tablespoons of lime juice.
  14. 14. Add the lime juice and maple syrup to the nut and lemon balm mixture.
  15. 15. Blend the ingredients well until a homogeneous paste forms.
  16. 16. Heat a grill pan.
  17. 17. Grill the watermelon slices briefly on both sides.
  18. 18. Serve the grilled watermelon with the macadamia lemon balm pesto.
