🍰 Grilled Watermelon with Nut and Lemon Balm Pesto

Ingredients
- 1 kg watermelon (1 piece)
- 6 macadamia nuts
- 20 g sliced almonds (2 tbsp)
- 2 bunch lemon balm
- 0.5 lime
- 8 tbsp maple syrup
Instructions
- 1. Cut the watermelon into eight thick slices using a large knife.
- 2. Remove the large seeds from the slices.
- 3. Carefully cut the flesh away from the rind using a small knife.
- 4. Roughly chop the macadamia nuts.
- 5. Place the chopped nuts and sliced almonds into a non-stick pan.
- 6. Toast the nuts without fat over medium heat.
- 7. Allow the toasted nuts to cool completely.
- 8. Wash the lemon balm and shake it dry.
- 9. Pluck the leaves from the stems.
- 10. Roughly chop the leaves.
- 11. Puree the cooled nuts and chopped lemon balm very finely using a hand blender.
- 12. Squeeze the half lime.
- 13. Measure out two tablespoons of lime juice.
- 14. Add the lime juice and maple syrup to the nut and lemon balm mixture.
- 15. Blend the ingredients well until a homogeneous paste forms.
- 16. Heat a grill pan.
- 17. Grill the watermelon slices briefly on both sides.
- 18. Serve the grilled watermelon with the macadamia lemon balm pesto.
