  1. 1. Wash the tomatoes thoroughly.
  2. 2. Pour boiling water over the tomatoes briefly to loosen the skin.
  3. 3. Peel the skin off the tomatoes.
  4. 4. Cut the tomatoes in half.
  5. 5. Remove the seeds and inner pulp.
  6. 6. Finely chop the remaining tomato flesh.
  7. 7. Peel the garlic cloves.
  8. 8. Place the garlic and a pinch of salt into a mortar.
  9. 9. Mash the garlic with the pestle until it forms a fine paste.
  10. 10. Add the chopped tomatoes and garlic paste to a bowl.
  11. 11. Finely chop the parsley.
  12. 12. Add the parsley to the tomato mixture.
  13. 13. Add four tablespoons of olive oil.
  14. 14. Squeeze in some lemon juice.
  15. 15. Season the mixture with salt and pepper.
  16. 16. Stir all ingredients well until combined.
  17. 17. Let the sauce rest for 15 minutes to allow the flavors to meld.
  18. 18. Rinse the squid under running water.
  19. 19. Pat the squid dry with a kitchen towel.
  20. 20. Cut the squid body into thick rings.
  21. 21. Keep the tentacles whole and intact.
  22. 22. Preheat your grill (charcoal or electric).
  23. 23. Place the squid rings and tentacles on the hot grill grate.
