🍽️ Grilled Squid with Tomatoes

Ingredients
- 800 g fresh squid (kitchen-ready)
- 5 tomatoes
- 3 tbsp parsley (finely chopped)
- 2 garlic cloves
- olive oil (extra virgin)
- 2 tbsp lemon juice (freshly squeezed)
- salt
- pepper (freshly ground)
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Pour boiling water over the tomatoes briefly to loosen the skin.
- 3. Peel the skin off the tomatoes.
- 4. Cut the tomatoes in half.
- 5. Remove the seeds and inner pulp.
- 6. Finely chop the remaining tomato flesh.
- 7. Peel the garlic cloves.
- 8. Place the garlic and a pinch of salt into a mortar.
- 9. Mash the garlic with the pestle until it forms a fine paste.
- 10. Add the chopped tomatoes and garlic paste to a bowl.
- 11. Finely chop the parsley.
- 12. Add the parsley to the tomato mixture.
- 13. Add four tablespoons of olive oil.
- 14. Squeeze in some lemon juice.
- 15. Season the mixture with salt and pepper.
- 16. Stir all ingredients well until combined.
- 17. Let the sauce rest for 15 minutes to allow the flavors to meld.
- 18. Rinse the squid under running water.
- 19. Pat the squid dry with a kitchen towel.
- 20. Cut the squid body into thick rings.
- 21. Keep the tentacles whole and intact.
- 22. Preheat your grill (charcoal or electric).
- 23. Place the squid rings and tentacles on the hot grill grate.
- 24. Grill the squid on all sides.
- 25. Grill them for 3 to 4 minutes per side.
- 26. Remove the grilled squid from the grill.
- 27. Add the hot squid to the prepared tomato sauce.
- 28. Gently mix the squid with the sauce.
- 29. Serve the dish immediately.
- 30. Serve with fresh, crusty white bread.
