🍽️ Grilled Sweet Potatoes with Tomato Sauce

Ingredients
- 1.2 kg sweet potatoes
- oil
- 2 cans chunky tomatoes (approx. 450 g each)
- 4 tbsp tomato paste
- 1 tsp oregano
- 1 bunch spring onions
- 1 clove garlic
- 1 tsp coriander
- 1 tsp cumin
- 2 chili peppers
- salt
- pepper
Instructions
- 1. Wash the spring onions and cut off the hard ends.
- 2. Slice the spring onions into thin rings.
- 3. Peel the garlic and chop it finely.
- 4. Heat the oil in a pan.
- 5. Sauté the spring onions in the hot oil.
- 6. Add the chopped garlic, tomatoes, tomato paste, and oregano to the pan.
- 7. Let the sauce simmer on medium heat for 30 minutes.
- 8. Halve the chili peppers lengthwise and remove the seeds.
- 9. Dice the chili peppers finely.
- 10. Add cumin, coriander, and the chili peppers to the sauce.
- 11. Season the sauce with salt and pepper.
- 12. Let the sauce cool down to lukewarm.
- 13. Cut the sweet potatoes into wedges or long quarters.
- 14. Brush the sweet potatoes with some oil.
- 15. Grill the sweet potatoes on a not-too-hot grill.
- 16. Grill each side for about 5 minutes.
- 17. Serve the grilled sweet potatoes with the tomato salsa.
