  1. 1. Wash the spring onions and cut off the hard ends.
  2. 2. Slice the spring onions into thin rings.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Heat the oil in a pan.
  5. 5. Sauté the spring onions in the hot oil.
  6. 6. Add the chopped garlic, tomatoes, tomato paste, and oregano to the pan.
  7. 7. Let the sauce simmer on medium heat for 30 minutes.
  8. 8. Halve the chili peppers lengthwise and remove the seeds.
  9. 9. Dice the chili peppers finely.
  10. 10. Add cumin, coriander, and the chili peppers to the sauce.
  11. 11. Season the sauce with salt and pepper.
  12. 12. Let the sauce cool down to lukewarm.
  13. 13. Cut the sweet potatoes into wedges or long quarters.
  14. 14. Brush the sweet potatoes with some oil.
  15. 15. Grill the sweet potatoes on a not-too-hot grill.
  16. 16. Grill each side for about 5 minutes.
  17. 17. Serve the grilled sweet potatoes with the tomato salsa.
