🍽️ Grilled Sole with Vegetables

Ingredients
- 600 g yellow beans
- salt
- 1 lime
- 400 g broccoli florets
- 1 stalk leek
- 4 tbsp olive oil
- 100 ml vegetable stock
- white pepper
- 4 sole (ready for cooking)
Instructions
- 1. Wash the beans thoroughly.
- 2. Remove the ends and strings from the beans.
- 3. Boil the beans in salted water for 10 to 12 minutes until al dente.
- 4. Squeeze the lime half to extract the juice.
- 5. Wash the broccoli florets.
- 6. Wash the leek thoroughly.
- 7. Remove the tough ends from the leek.
- 8. Cut the leek into rings.
- 9. Heat 2 tablespoons of oil in a pan.
- 10. Fry the leek rings in the pan until golden brown.
- 11. Add the broccoli to the pan.
- 12. Pour the pan juices into the pan.
- 13. Simmer the vegetables under a lid for about 5 minutes.
- 14. Add the cooked beans to the vegetables.
- 15. Season the mixture with salt, lime juice, and pepper.
- 16. Rinse the plaice under cold water.
- 17. Pat the fish dry.
- 18. Salt the plaice.
- 19. Pepper the plaice.
- 20. Brush the fish with the remaining oil.
- 21. Preheat the grill.
- 22. Grill the plaice on the hot grill.
- 23. Grill each side for 4 to 5 minutes over medium heat.
- 24. Wash the remaining lime with hot water.
- 25. Pat the lime dry.
- 26. Cut the lime into quarters.
- 27. Distribute the vegetables onto plates.
- 28. Place the grilled plaice on top of the vegetables.
- 29. Garnish the dishes with the lime wedges.
