🍽️ Grilled Sardines on a Bed of Greens

Ingredients
- 750 g spinach
- 1 clove of garlic
- 1 shallot
- 2 tbsp olive oil
- 1 tbsp raisins
- salt
- pepper (from the mill)
- nutmeg
- 12 sardines
- 1 bunch herbs (e.g. thyme, rosemary, parsley)
- oil (for brushing)
- 1 lemon
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove thick stems and wilted leaves.
- 3. Place the wet spinach into a pot.
- 4. Heat the pot over high heat.
- 5. Let the spinach wilt down.
- 6. Transfer the spinach into a colander.
- 7. Allow the liquid to drain off.
- 8. Chop the spinach finely.
- 9. Peel the garlic.
- 10. Peel the shallot.
- 11. Finely chop the garlic and shallot.
- 12. Heat some oil in a pan.
- 13. Sauté the vegetables in it.
- 14. Add the raisins.
- 15. Let the raisins sweat briefly.
- 16. Add the chopped spinach to the pan.
- 17. Season the mixture with salt.
- 18. Season the mixture with pepper.
- 19. Season the mixture with nutmeg.
- 20. Rinse the sardines under running water.
- 21. Pat the fish dry with a kitchen towel.
- 22. Take 1 to 2 sprigs of your herbs.
- 23. Stuff the herbs into the belly cavity of each fish.
- 24. Salt the fish on the outside.
- 25. Pepper the fish on the outside.
- 26. Brush the fish thinly with oil.
- 27. Place the fish on the hot grill.
- 28. Grill the fish for about 3 minutes on the first side.
- 29. Turn the fish over.
- 30. Grill the fish for about 3 minutes on the second side.
- 31. Cut the lemon into small pieces.
- 32. Take pre-warmed plates.
- 33. Place the spinach onto the plates.
- 34. Place the grilled fish on top of the spinach.
- 35. Garnish the dish with the lemon pieces.
