🍽️ Colorful Grilled Sardines with Peppers

Ingredients
- 500 g Sardine fillet (kitchen-ready)
- 1 tbsp Lemon juice
- 1 Red bell pepper
- 1 Green bell pepper
- 1 Yellow bell pepper
- 2 Garlic cloves
- 5 tbsp Olive oil
- Salt
- Pepper (from the mill)
- 1 tbsp Thyme leaves
- 2 tbsp Balsamic vinegar
Instructions
- 1. Rinse the sardines under running water.
- 2. Pat the fish thoroughly dry with a kitchen towel.
- 3. Wash the bell peppers.
- 4. Cut the bell peppers in half lengthwise.
- 5. Remove the core with the seeds.
- 6. Slice the pepper flesh into thin strips.
- 7. Finely chop the garlic.
- 8. Mix the garlic with the olive oil.
- 9. Place a sheet of aluminum foil on the grill grate.
- 10. Season the pepper strips with salt and pepper.
- 11. Brush the peppers with two tablespoons of the garlic-oil mixture.
- 12. Place the peppers on the foil.
- 13. Grill the peppers for about 12 to 15 minutes.
- 14. Turn the peppers once halfway through.
- 15. Season the fish fillets with salt and pepper.
- 16. Place thyme sprigs on the skin side of the fish.
- 17. Brush both sides of the fish with the remaining garlic-oil mixture.
- 18. Place the fish on the foil.
- 19. Grill the fish skin-side down for about 4 to 5 minutes.
- 20. Continue grilling until the fish is cooked through.
- 21. Arrange the fish on top of the vegetables.
- 22. You can also grill the fish whole if it is already cleaned and gutted.
- 23. For example, grill fennel as a side dish alongside it.
