  1. 1. Rinse the sardines under running water.
  2. 2. Pat the fish thoroughly dry with a kitchen towel.
  3. 3. Wash the bell peppers.
  4. 4. Cut the bell peppers in half lengthwise.
  5. 5. Remove the core with the seeds.
  6. 6. Slice the pepper flesh into thin strips.
  7. 7. Finely chop the garlic.
  8. 8. Mix the garlic with the olive oil.
  9. 9. Place a sheet of aluminum foil on the grill grate.
  10. 10. Season the pepper strips with salt and pepper.
  11. 11. Brush the peppers with two tablespoons of the garlic-oil mixture.
  12. 12. Place the peppers on the foil.
  13. 13. Grill the peppers for about 12 to 15 minutes.
  14. 14. Turn the peppers once halfway through.
  15. 15. Season the fish fillets with salt and pepper.
  16. 16. Place thyme sprigs on the skin side of the fish.
  17. 17. Brush both sides of the fish with the remaining garlic-oil mixture.
  18. 18. Place the fish on the foil.
  19. 19. Grill the fish skin-side down for about 4 to 5 minutes.
  20. 20. Continue grilling until the fish is cooked through.
  21. 21. Arrange the fish on top of the vegetables.
  22. 22. You can also grill the fish whole if it is already cleaned and gutted.
  23. 23. For example, grill fennel as a side dish alongside it.
