🥗 Grilled Beef and Mushroom Skewers with Salad

Ingredients
- 500 g Shiitake mushrooms
- salt

- 12 thin slices roast beef (approx. 60 g each, without fat rim)
- 2 garlic cloves
- 2 tsp freshly grated ginger
- 2 tsp mustard
- 2 tbsp white wine vinegar
- 4 tbsp olive oil

- 2 bunches arugula
- 2 tomatoes
- 1 spring onion
- 1 red chili pepper
- 1 small garlic clove

- 0.5 tsp mustard
- 5 tbsp olive oil

Instructions
- 1. Finely chop the garlic.
- 2. Mix the garlic with the remaining marinade ingredients.
- 3. Wash the arugula.
- 4. Remove any wilted leaves from the arugula.
- 5. Spin-dry the arugula.
- 6. Wash the tomatoes.
- 7. Cut the tomatoes into quarters.
- 8. Remove the seeds from the tomatoes.
- 9. Cut the tomatoes into small cubes.
- 10. Wash the spring onions.
- 11. Remove the tough ends of the spring onions.
- 12. Slice the spring onions into rings.
- 13. Wash the chili pepper.
- 14. Remove the seeds from the chili pepper.
- 15. Peel the garlic.
- 16. Roughly chop the chili pepper and the garlic.
- 17. Mix all the prepared salad ingredients.
- 18. Keep the salad ingredients cool until serving.
- 19. Whisk the vinegar with the mustard for the salad dressing.
- 20. Season the salad dressing with salt and pepper.
- 21. Add the oil to the salad dressing.
- 22. Taste the salad dressing and adjust seasoning if needed.
- 23. Clean the mushrooms.
- 24. Divide the marinade into two equal halves.
- 25. Toss the mushrooms in the first half of the marinade.
- 26. Toss the meat in the second half of the marinade.
