🍕 Grilled Pizza with Tomato and Mozzarella

Ingredients
- 1 cube yeast
- 600 g flour (and some flour for the work surface)
- salt
- 2 tbsp olive oil
- 125 g mozzarella (9 % fat)
- 10 tomatoes
- 2 garlic cloves
- pepper
- 3 sprigs basil
Instructions
- 1. Dissolve the yeast in 300 milliliters of lukewarm water.
- 2. Mix the flour with one teaspoon of salt in a bowl.
- 3. Make a well in the center of the flour mixture.
- 4. Pour the yeast water and the oil into the well.
- 5. Knead everything into a smooth dough.
- 6. If the dough is too wet, work in some flour.
- 7. If the dough is too dry, add some lukewarm water.
- 8. Knead the dough vigorously on a floured work surface for about 10 minutes.
- 9. Return the dough to the bowl.
- 10. Let the dough rise, covered, in a warm place for about 1 hour.
- 11. Drain the mozzarella in the meantime.
- 12. Slice the mozzarella into thin slices.
- 13. Pour boiling water over the tomatoes and shock them immediately.
- 14. Remove the skin from the tomatoes.
- 15. Quarter the tomatoes and remove the core.
- 16. Dice the tomatoes finely.
- 17. Peel the garlic.
- 18. Press the garlic onto the diced tomatoes.
- 19. Season the tomato mixture with salt and pepper.
- 20. Preheat the grill.
- 21. Knead the risen dough vigorously again.
- 22. Divide the dough into four equal portions.
- 23. Roll out the portions into rounds on a lightly floured work surface.
- 24. Place the pizzas on the hot grill.
- 25. Grill the pizzas for about 4 to 5 minutes.
- 26. Turn the pizzas over.
- 27. Top the pizzas with the mozzarella and diced tomatoes.
- 28. Close the grill or cover the pizzas with aluminum foil.
- 29. Bake the pizzas for another 5 minutes until the cheese is melted.
- 30. Wash the basil.
- 31. Shake the basil dry.
- 32. Pluck the leaves from the stems.
- 33. Chop the basil leaves.
- 34. Sprinkle the chopped basil over the finished pizzas.
