  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Peel the garlic cloves.
  4. 4. Finely chop the garlic.
  5. 5. Add some salt to the chopped garlic.
  6. 6. Mash the garlic-salt mixture into a fine paste using the flat side of a knife.
  7. 7. Mix the garlic paste with the yogurt.
  8. 8. Add the herbs to the yogurt-garlic mixture.
  9. 9. Coat the lamb leg thoroughly with the marinade.
  10. 10. Wrap the marinated leg in cling film.
  11. 11. Place the foil-wrapped leg in the refrigerator overnight.
  12. 12. Thread the lamb leg onto a grill skewer.
  13. 13. Wrap kitchen twine around the meat to secure it to the skewer.
  14. 14. Season the lamb leg with salt to taste.
  15. 15. Season the lamb leg with pepper to taste.
  16. 16. Grill the leg for 50 to 60 minutes.
