🍽️ Fresh Salmon Skewers with Tomato-Fennel Salsa

Ingredients
- 200 g ripe tomatoes
- 2 spring onions
- 1 fennel bulb
- 1 red chili pepper
- 3 sprigs cilantro
- 1 lime
- 3 tbsp olive oil
- salt
- sugar
- 400 g salmon fillet (skinless)
- 1 dried chili pepper
- pepper
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into quarters and remove the hard stem base.
- 3. Remove the seeds and soft pulp from the tomato quarters.
- 4. Cut the firm tomato flesh into approx. 1 cm cubes.
- 5. Wash the spring onions and remove the dry tips.
- 6. Slice the spring onions into approx. 0.5 cm thick rings.
- 7. Wash the fennel thoroughly.
- 8. Cut the fennel in half lengthwise.
- 9. Remove the hard core (base) from the fennel.
- 10. Dice the fennel bulb into very fine cubes.
- 11. Cut the fresh chili pepper in half lengthwise.
- 12. Remove the seeds and white membranes from the chili pepper.
- 13. Rinse the deseeded chili pepper briefly.
- 14. Finely chop the chili pepper.
- 15. Wash the fresh coriander (cilantro).
- 16. Shake the coriander dry to remove excess water.
- 17. Finely chop the coriander leaves.
- 18. Squeeze the lime to extract the juice.
- 19. Place the diced tomatoes, fennel, spring onions, chili, and coriander into a bowl.
- 20. Add 1 tablespoon of lime juice and 1 tablespoon of oil to the vegetables.
- 21. Mix all salsa ingredients well together.
- 22. Season the salsa with salt and a pinch of sugar.
- 23. Place the salsa in the refrigerator.
- 24. Let the salsa chill for at least 30 minutes to allow the flavors to develop.
- 25. Cut the salmon fillet into 12 equal-sized cubes.
- 26. Crumble the dried chili pepper into small pieces.
- 27. Mix the crumbled chili pepper with ground pepper and the remaining oil.
- 28. Pour the chili-oil mixture over the salmon cubes.
- 29. Let the salmon marinate for 15 minutes.
- 30. Lightly salt the marinated salmon cubes.
- 31. Thread the salmon cubes onto 4 wooden skewers.
- 32. Heat a grill pan on the stovetop.
- 33. Place the salmon skewers in the hot grill pan.
- 34. Grill the skewers all around for 4 to 5 minutes.
- 35. Remove the grilled salmon skewers from the pan.
- 36. Place the salsa on a plate.
- 37. Place the salmon skewers next to the salsa.
- 38. Serve the skewers with lime wedges as desired.
