  1. 1. Wash the tomatoes thoroughly.
  2. 2. Cut the tomatoes into quarters and remove the hard stem base.
  3. 3. Remove the seeds and soft pulp from the tomato quarters.
  4. 4. Cut the firm tomato flesh into approx. 1 cm cubes.
  5. 5. Wash the spring onions and remove the dry tips.
  6. 6. Slice the spring onions into approx. 0.5 cm thick rings.
  7. 7. Wash the fennel thoroughly.
  8. 8. Cut the fennel in half lengthwise.
  9. 9. Remove the hard core (base) from the fennel.
  10. 10. Dice the fennel bulb into very fine cubes.
  11. 11. Cut the fresh chili pepper in half lengthwise.
  12. 12. Remove the seeds and white membranes from the chili pepper.
  13. 13. Rinse the deseeded chili pepper briefly.
  14. 14. Finely chop the chili pepper.
  15. 15. Wash the fresh coriander (cilantro).
  16. 16. Shake the coriander dry to remove excess water.
  17. 17. Finely chop the coriander leaves.
  18. 18. Squeeze the lime to extract the juice.
  19. 19. Place the diced tomatoes, fennel, spring onions, chili, and coriander into a bowl.
  20. 20. Add 1 tablespoon of lime juice and 1 tablespoon of oil to the vegetables.
  21. 21. Mix all salsa ingredients well together.
  22. 22. Season the salsa with salt and a pinch of sugar.
  23. 23. Place the salsa in the refrigerator.
  24. 24. Let the salsa chill for at least 30 minutes to allow the flavors to develop.
  25. 25. Cut the salmon fillet into 12 equal-sized cubes.
  26. 26. Crumble the dried chili pepper into small pieces.
  27. 27. Mix the crumbled chili pepper with ground pepper and the remaining oil.
  28. 28. Pour the chili-oil mixture over the salmon cubes.
  29. 29. Let the salmon marinate for 15 minutes.
  30. 30. Lightly salt the marinated salmon cubes.
  31. 31. Thread the salmon cubes onto 4 wooden skewers.
  32. 32. Heat a grill pan on the stovetop.
  33. 33. Place the salmon skewers in the hot grill pan.
  34. 34. Grill the skewers all around for 4 to 5 minutes.
  35. 35. Remove the grilled salmon skewers from the pan.
  36. 36. Place the salsa on a plate.
  37. 37. Place the salmon skewers next to the salsa.
  38. 38. Serve the skewers with lime wedges as desired.
