🍽️ Herb-grilled Mackerel

Ingredients
- 4 sprigs lemon thyme
- 4 sprigs parsley
- 4 sprigs lemon balm
- 2 cloves garlic
- 1400 g small mackerel (ready for cooking; 4 small mackerels)
- salt
- pepper
- 2 tbsp olive oil
Instructions
- 1. Rinse all the herbs under running water.
- 2. Shake the herbs dry.
- 3. Peel the garlic cloves.
- 4. Halve the garlic cloves.
- 5. Rinse the mackerel.
- 6. Pat the mackerel dry with a kitchen towel.
- 7. Season the mackerel inside and out with salt.
- 8. Season the mackerel inside and out with pepper.
- 9. Take a sharp knife.
- 10. Score the skin on both sides of the mackerel diagonally.
- 11. Make 4 to 5 cuts per side.
- 12. Place 1 sprig of thyme into the belly cavity of each mackerel.
- 13. Place 1 stalk of parsley into the belly cavity of each mackerel.
- 14. Place 1 stalk of lemon balm into the belly cavity of each mackerel.
- 15. Add half a garlic clove to the belly cavity of each mackerel.
- 16. Brush the mackerel all around with the oil.
- 17. Place each mackerel into a fish grilling basket.
- 18. Close the grilling basket.
- 19. Place the mackerel on the hot grill.
- 20. Grill the mackerel from the first side for 12 to 15 minutes.
- 21. Grill the mackerel from the second side for 12 to 15 minutes.
