🍽️ Grilled Veal Liver with Coriander and Orange

Ingredients
- 0.5 tsp coriander
- 0.5 tsp peppercorns
- 1 tbsp thyme leaves
- 3 tbsp olive oil
- 800 g veal liver (kitchen-ready)
- 2 oranges
- sea salt
Instructions
- 1. Place the coriander, pepper, and thyme into a mortar.
- 2. Crush the spices with the pestle until they are finely ground.
- 3. Stir the oil into the spice powder until a paste forms.
- 4. Rinse the veal liver briefly under running water.
- 5. Pat the liver completely dry with a kitchen towel.
- 6. Cut the liver into eight thin slices.
- 7. Peel the oranges completely to remove all white pith.
- 8. Cut the oranges into thick slices.
- 9. Brush the orange and liver slices generously with the spice oil paste.
- 10. Preheat the grill to high heat.
- 11. Place the liver slices on the hot grill.
- 12. Grill the liver on the first side for two to three minutes until golden brown.
- 13. Turn the liver and grill the second side for another two to three minutes.
- 14. Brush the liver with a little oil repeatedly while grilling.
- 15. Season the grilled veal liver with salt just before serving.
- 16. Arrange the liver on plates together with the grilled oranges.
- 17. Serve the dish immediately while warm.
