  3. 3. Cut the peppers into rings and large strips.
  4. 4. Peel the onion.
  5. 5. Cut the onion into thick rings.
  6. 6. Wash the tomatoes.
  7. 7. Slice the tomatoes.
  8. 8. Season all the vegetables with salt and pepper.
  9. 9. Brush the vegetables with oil.
  10. 10. Preheat a grill pan or a serving pan.
  11. 11. Pat the fish fillet dry with kitchen paper.
  12. 12. Place the fish together with the vegetables in the hot pan.
  13. 13. Turn the fish frequently.
  14. 14. Roast the vegetables for about 3 minutes on each side.
  15. 15. Check if the fish is cooked through.
  16. 16. Pierce the fish.
  17. 17. If clear liquid runs out, the fish is done.
