  1. 1. Wash the rosemary and shake it dry.
  2. 2. Cut one sprig into four small pieces.
  3. 3. Pluck off the remaining needles and chop them very finely.
  4. 4. Wash the orange and dry it.
  5. 5. Cut eight thin slices from the center of the orange.
  6. 6. Rinse the cod fillets and pat them dry.
  7. 7. Season the fillets with salt, pepper, and the finely chopped rosemary.
  8. 8. Place one rosemary piece and two orange slices on each fillet.
  9. 9. Secure the topping with kitchen twine so it does not slip off.
  10. 10. Grease an aluminum foil tray with the oil.
  11. 11. Place the fish packets into the tray.
  12. 12. Grill the fillets on both sides for about four to five minutes each.
