  1. 1. Wash the lemongrass stalks and kaffir lime leaves in hot water. Pat them dry with a cloth.
  2. 2. Wash the pears and dry them. Cut each pear into eight wedges, removing the core.
  3. 3. Halve the ham strips lengthwise. Wrap one ham strip around each scallop.
  4. 4. Thread one wrapped scallop and one pear wedge alternately onto a lemongrass stalk.
  5. 5. Season the skewers with salt and pepper.
  6. 6. Melt the butter in a pan until it foams. Add the kaffir lime leaves and fry them for 5 to 10 minutes.
  7. 7. Pour the flavored butter over the skewers.
  8. 8. Grill the skewers on the preheated grill for 8 to 10 minutes, turning them on both sides.
