🍽️ Grilled pepper halves stuffed with goat cheese and tomatoes

Ingredients
- 4 bell peppers (red and yellow)
- 16 cherry tomatoes (red and yellow)
- 150 g goat cheese
- 1 bunch basil
- 2 tbsp lemon juice
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 1 lemon
Instructions
- 1. Cut the peppers in half lengthwise.
- 2. Remove the core and seeds from the pepper halves.
- 3. Rinse the peppers thoroughly.
- 4. Pat the pepper halves dry with a kitchen towel.
- 5. Cut the goat cheese into small cubes.
- 6. Wash the cherry tomatoes.
- 7. Halve the cherry tomatoes.
- 8. Wash the basil leaves.
- 9. Shake the basil dry to remove excess water.
- 10. Chop the basil leaves into coarse strips.
- 11. Place the cubed goat cheese, halved tomatoes, and basil into a bowl.
- 12. Season the filling with salt and pepper to taste.
- 13. Stir some oil into the mixture.
- 14. Add some lemon juice to the filling and mix everything well.
- 15. Fill the pepper halves with the cheese and tomato mixture.
- 16. Secure the stuffed pepper halves together with toothpicks so they do not open.
- 17. Preheat the grill.
- 18. Place the peppers on the hot grill.
- 19. Use aluminum foil on the grill grate if necessary.
- 20. Grill the peppers for about 5 minutes.
- 21. Cut lemons into wedges.
- 22. Serve the grilled peppers garnished with the lemon wedges.
