🍽️ Grilled Chicken Skewers

Ingredients
- 300 g chicken breast fillet (2 chicken breast fillets)
- 2 red onions
- 1 tsp Madras curry powder
- 3 tbsp olive oil
- 450 g mixed tomatoes
- 1 tbsp balsamic vinegar
- salt
- pepper
- 1 tsp liquid honey
- 1 bunch chives
- 0.5 lemon
- 1 avocado
- 4 tbsp yogurt (0.3 % fat)
Instructions
- 1. Rinse the meat under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into approx. 2 cm cubes.
- 4. Peel the onions.
- 5. Cut the onions into approx. 2 cm pieces.
- 6. Thread the meat and onions alternately onto the skewers.
- 7. Mix the curry powder with 1 tbsp oil in a small bowl.
- 8. Brush the skewers with the curry-oil mixture.
- 9. Cover the skewers with a lid or foil.
- 10. Place the skewers in the fridge for at least 1 hour to marinate.
- 11. Rinse the tomatoes under running water.
- 12. Cut out the stem areas of the tomatoes in a wedge shape.
- 13. Slice the tomato flesh into slices.
- 14. Place the tomato slices on a plate.
- 15. Whisk together balsamic vinegar, salt, pepper, and honey for the sauce.
- 16. Slowly whisk in the remaining oil into the vinegar mixture.
- 17. Rinse the chives under running water.
- 18. Shake the chives dry.
- 19. Cut the chives into fine rings.
- 20. Reserve a small amount of the sauce in a separate bowl.
- 21. Stir the chive rings into the reserved sauce.
- 22. Pour the chive sauce over the tomato slices.
- 23. Halve the lemon.
- 24. Squeeze the lemon half.
- 25. Halve the avocado lengthwise.
- 26. Remove the pit from the avocado half.
- 27. Carefully separate the avocado flesh from the skin.
- 28. Place the avocado flesh in a blender.
- 29. Add the yogurt to the blender.
- 30. Add 1 tbsp lemon juice to the blender.
- 31. Season the avocado mixture with salt and pepper.
- 32. Blend the ingredients until smooth.
- 33. Heat a grill pan on the stove.
- 34. Lightly salt the marinated skewers.
- 35. Place the skewers in the hot grill pan.
- 36. Grill the skewers for approx. 3-4 minutes on each side.
- 37. Place the grilled skewers on top of the tomatoes.
- 38. Drizzle some avocado cream over the skewers.
- 39. Serve the dish immediately.
