🍽️ Grilled Chicken Skewers with Zucchini

Ingredients
- 500 g chicken breast fillet
- 1 clove garlic
- 1 tbsp grainy mustard
- 1 tsp dried thyme
- 2 tbsp lemon juice
- 1 tbsp honey
- 5 tbsp olive oil
- 2 zucchini
- 2 long, thin eggplants
- 1 cucumber
- salt
- parsley (for garnish)
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into bite-sized cubes.
- 4. Peel the garlic clove and chop it finely.
- 5. Mix the chopped garlic with mustard, thyme, lemon juice, honey, and oil in a bowl.
- 6. Add the chicken cubes to the marinade and toss them to coat well.
- 7. Cover the bowl and place it in the refrigerator for about 30 minutes.
- 8. Wash the zucchini, eggplant, and cucumber thoroughly.
- 9. Cut the vegetables into even slices about 1 cm thick.
- 10. Sprinkle the vegetables with salt and let them stand for approx. 10 minutes to draw out water.
- 11. Then pat the vegetables dry with a cloth.
- 12. Soak the wooden skewers in water before use.
- 13. Thread the marinated chicken and vegetables alternately onto the skewers.
- 14. Season the skewers with a little salt.
- 15. Place the skewers on the hot grill.
- 16. Grill the skewers for about 10 minutes, turning them in between.
- 17. Sprinkle the finished skewers with fresh parsley.
- 18. Serve the skewers immediately.
