  1. 1. Place the bread roll in a small bowl and cover it with some water.
  2. 2. Peel the shallots and the garlic.
  3. 3. Dice the shallots and the garlic into very fine cubes.
  4. 4. Heat the oil in a pan.
  5. 5. Add the shallots and the garlic to the hot pan.
  6. 6. Sauté the vegetables until they are soft and translucent.
  7. 7. Remove the pan from the heat and add the vegetable mixture to a large mixing bowl.
  8. 8. Add the minced meat to the bowl.
  9. 9. Add the egg to the bowl.
  10. 10. Grate the lemon zest and add it to the bowl.
  11. 11. Squeeze the soaked bread roll well with your hands to remove the water.
  12. 12. Add the squeezed bread roll to the bowl.
  13. 13. Season the meat mixture with salt and pepper.
  14. 14. Knead all ingredients together with your hands until you have a smooth dough.
  15. 15. Check the consistency of the dough.
  16. 16. If the dough is too sticky, add some breadcrumbs and knead again.
  17. 17. Preheat your grill.

  19. 19. Form small balls from the meat dough.
  20. 20. Thread four meatballs onto each skewer.
