  2. 2. Press a small indentation in the center.
  3. 3. Crumble the yeast into the indentation.
  4. 4. Mix the yeast with 3 to 4 tablespoons of milk and the sugar.
  5. 5. Let the mixture rise under a cover for about 30 minutes.
  6. 6. Add the remaining ingredients.
  7. 7. Knead everything into a soft dough.
  8. 8. Let the dough rest covered for another 30 minutes.
  9. 9. Divide the dough into 10 to 12 equal pieces.
  10. 10. Shape them into long strands about 20 to 30 centimeters long.
  11. 11. Wrap the strands spirally around the grill sticks.
  12. 12. Bake the bread on the charcoal grill or over the campfire for about 10 minutes.
  13. 13. Bake the bread until golden brown on all sides.
  14. 14. Wash the trout under cold running water.
  15. 15. Pat the trout dry with kitchen paper.
  16. 16. Season the fish inside and out with salt and pepper.
  17. 17. Place the trout together with the rosemary sprigs on the hot grill.
  18. 18. Cook the trout for 5 to 10 minutes, turning them to cook both sides thoroughly.
  19. 19. Arrange the fish on a platter.
  20. 20. Add a little extra seasoning.
  21. 21. Drizzle each fish with 1 tablespoon of good olive oil.
  22. 22. Drizzle each fish with fresh lemon juice.
  23. 23. Serve the trout alongside the freshly grilled bread.
