🍽️ Grilled Trout with Rosemary and Fresh Bread

Ingredients
- 4 Trout (ready for the kitchen)
- 10 Rosemary sprigs
- Salt
- Pepper (freshly ground)
- Olive oil (extra virgin)
- 6 tbsp Lemon juice (freshly squeezed)
- 700 g Flour
- 1 cube Yeast (42 g)
- 250 ml lukewarm Milk
- 2 tsp Sugar
- 2 tsp Salt
Instructions
- 1. Sift the flour into a bowl.
- 2. Press a small indentation in the center.
- 3. Crumble the yeast into the indentation.
- 4. Mix the yeast with 3 to 4 tablespoons of milk and the sugar.
- 5. Let the mixture rise under a cover for about 30 minutes.
- 6. Add the remaining ingredients.
- 7. Knead everything into a soft dough.
- 8. Let the dough rest covered for another 30 minutes.
- 9. Divide the dough into 10 to 12 equal pieces.
- 10. Shape them into long strands about 20 to 30 centimeters long.
- 11. Wrap the strands spirally around the grill sticks.
- 12. Bake the bread on the charcoal grill or over the campfire for about 10 minutes.
- 13. Bake the bread until golden brown on all sides.
- 14. Wash the trout under cold running water.
- 15. Pat the trout dry with kitchen paper.
- 16. Season the fish inside and out with salt and pepper.
- 17. Place the trout together with the rosemary sprigs on the hot grill.
- 18. Cook the trout for 5 to 10 minutes, turning them to cook both sides thoroughly.
- 19. Arrange the fish on a platter.
- 20. Add a little extra seasoning.
- 21. Drizzle each fish with 1 tablespoon of good olive oil.
- 22. Drizzle each fish with fresh lemon juice.
- 23. Serve the trout alongside the freshly grilled bread.
