  1. 1. Rinse the trout under cold running water.
  2. 2. Gently pat the fish completely dry with kitchen paper.
  3. 3. Place 1 tablespoon of capers into a mortar.
  4. 4. Coarsely crush the capers.
  5. 5. Mix the crushed capers with the olive oil and the juice of half a lemon.
  6. 6. Season the marinade with salt and pepper.
  7. 7. Salt and pepper the inside of the trout.
  8. 8. Brush the outside of the trout all around with the oil-caper mixture.
  9. 9. Preheat the charcoal grill to medium heat.
  10. 10. Grill the trout for about 6 minutes on the first side.
  11. 11. Turn the fish and grill for another 6 minutes on the second side.
  12. 12. Cut the remaining lemon into wedges.
  13. 13. Serve the grilled trout garnished with the remaining capers and lemon wedges.
