🍽️ Grilled Trout with Herb Filling

Ingredients
- 1 onion
- 3 garlic cloves
- 0.5 bunch flat-leaf parsley
- 1 sprig rosemary
- 1 sprig lemon balm
- 3 tbsp oil
- 2 tbsp dry white wine
- salt
- pepper (freshly ground)
- 4 trout ready for cooking (300 g each)
- 1 unwaxed lemon
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Peel the garlic clove and chop it finely.
- 3. Wash the herbs and shake them dry.
- 4. Chop the herbs finely.
- 5. Heat one tablespoon of oil in a pan.
- 6. Sauté the onion cubes and garlic in it until soft and translucent.
- 7. Pour in the wine and let the mixture boil briefly.
- 8. Let the onion-wine mixture cool down completely.
- 9. Mix the cooled mixture with the chopped herbs.
- 10. Season the filling with salt and pepper.
- 11. Rinse the trout under cold water.
- 12. Pat the fish dry inside and out with kitchen paper.
- 13. Rub the trout inside and out with salt and pepper.
- 14. Stuff the trout with the herb-onion mixture.
- 15. Brush the skin of the fish with the remaining oil.
- 16. Place the fish in special fish grilling tongs.
- 17. Wash the lemon under hot water.
- 18. Dry the lemon.
- 19. Cut the lemon into quarters.
- 20. Preheat a charcoal grill.
- 21. Grill the trout on each side for about 8 to 10 minutes.
- 22. Serve the fish with the lemon quarters.
