🍽️ Grilled Sea Bream

Ingredients
- 700 g sea bream (2 sea breams; ready for cooking)
- sea salt
- pepper (from the mill)
- 2 garlic cloves
- 2 shallots
- 2 dried tomatoes (packed in oil)
- 1 slice whole wheat toast
- 10 g green olives (pitted; 4 green olives)
- 10 g black olives (pitted; 4 black olives)
- 0.5 bunch lemon thyme
- 50 g cream cheese (13 % fat)
- 1 small organic lemon
Instructions
- 1. Rinse the sea bream under running water.
- 2. Pat the fish inside and out completely dry with kitchen paper.
- 3. Season the sea bream inside and out with salt and pepper.
- 4. Peel the garlic cloves.
- 5. Dice the garlic very finely.
- 6. Peel the shallots.
- 7. Finely chop the shallots.
- 8. Let the tomatoes drain in a tea strainer.
- 9. Catch the draining oil in a small bowl.
- 10. Remove the crusts from the toast bread.
- 11. Dice the toast bread very small.
- 12. Heat one tablespoon of the collected tomato oil in a coated pan.
- 13. Fry the bread cubes until crispy and brown over medium heat.
- 14. Turn the cubes regularly while doing so.
- 15. This takes about two minutes.
- 16. Add the diced garlic and shallots to the pan.
- 17. Fry everything together, turning occasionally, for another two to three minutes.
- 18. Remove the pan from the heat.
- 19. Transfer the mixture into a bowl.
- 20. Let the filling cool down slightly.
- 21. Finely chop the dried tomatoes.
- 22. Chop the olives coarsely.
- 23. Add the chopped tomatoes and olives to the bread mixture.
- 24. Wash the lemon thyme.
- 25. Shake the leaves dry.
- 26. Pluck the leaves off the stems.
- 27. Mix the thyme leaves with the cream cheese mixture.
- 28. Season the filling generously with salt and pepper.
- 29. Fill the belly cavities of the sea bream with the mixture.
- 30. Close the openings with two toothpicks each.
- 31. Place the fish in two suitable grill baskets.
- 32. Rinse the lemon with hot water.
- 33. Dry the lemon.
- 34. Slice the lemon into thin slices.
- 35. Distribute the lemon slices over the sea bream.
- 36. Close the grill baskets.
- 37. Place the baskets on the grill grate.
- 38. Grill the fish for 15 to 20 minutes.
- 39. Turn the fish once during grilling.
- 40. Serve the grilled sea bream hot.
