🍽️ Grilled Prawns with Homemade Mayo

Ingredients
- 2 fresh egg yolks (room temperature!)
- 1 pinch salt
- 1 tsp hot mustard
- 2 tbsp lemon juice
- 200 ml germ oil
- 1 tbsp chive rings
- 1 tbsp freshly chopped dill
- white pepper
- 800 g shrimp (kitchen-ready, deveined and peeled except for the tail segment)
- 1 chili pepper
- 1 clove garlic
- 1 tbsp coarse mustard
- 3 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Make sure all ingredients for the mayonnaise are at room temperature.
- 2. Whisk the egg yolks vigorously with salt, mustard, and one tablespoon of lemon juice.
- 3. Stir in a few drops of oil into the egg yolk mixture first.
- 4. Slowly drizzle in the remaining oil in a thin stream while continuing to whisk.
- 5. Ensure the oil is immediately bound by the egg yolk until a thick, creamy mayonnaise forms.
- 6. Fold the chopped herbs into the finished mayonnaise.
- 7. Season the mayonnaise to taste with salt, pepper, and a little lemon juice.
- 8. Wash the prawns and pat them dry with a kitchen towel.
- 9. Wash the chili pepper, remove the stem, and chop it finely.
- 10. Peel the garlic and chop it finely as well.
- 11. Mix the chili, mustard, and oil in a bowl.
- 12. Toss the prawns in the marinade and mix well.
- 13. Season the prawns with salt and pepper.
- 14. Grill the prawns on a grill or in a grill pan for 3 to 4 minutes.
- 15. Turn the prawns occasionally while grilling.
